The best way to boost your intake of essential preconception vitamins and minerals is by eating plenty of whole, fresh, nutrient dense food.  This is a fantastically fresh, crisp superfood salad which when left under salt will become a pickle. Eat as a refreshing side dish to a heavy meal to make any heavy fats more digest able. It will keep fresh in the fridge up to three days

serves 4

Ingredients

200gm green cabbage, shredded finely

200gm red cabbage, shredded finely

½ carrot, fine matchsticks

1 celery stick, sliced on a thin diagonal

1 green apple, finely sliced

5 red radish’s, finely sliced

2 tablespoons roughly chopped mint

30gm raisins

50gm roasted and chopped walnuts

2 teaspoons sea salt

2 teaspoons brown rice vinegar

2 teaspoons mirin

 

Method

Place all vegetables and fruit in a mixing bowl.   Sprinkle the sea salt over the vegetables and fruit, and mix thoroughly using a kneading motion with your hands. Place the ingredients into a pickle press or cover the vegetables with a plate and weigh down with a heavy object for1 to 2 hours. Whilst waiting, roast the walnuts in the oven. Cool and roughly chop. Set aside. Now remove the ingredients from the pickle press and squeeze out the excess liquid. If too salty, rinse quickly under cold water in a strainer. Place in a serving bowl and fold in roasted walnuts and douse with the brown rice vinegar and mirin. Mix well and serve.
