One cauliflower – florets
One lemon – zest
4 garlic cloves – crushed
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon sweet paprika
1/4 teaspoon cayenne
1/2 teaspoon pink salt
1 to 2 teaspoons olive oil
Fresh ground pepper


Preheat the oven to 220°C.  Combine the cumin, coriander, paprika, cayenne, and pink salt in a bowl.

2  Place the cauliflower into the bowl with with spice mix and add the lemon zest, garlic, olive oil and plenty of fresh ground pepper.  Toss the cauliflower to coat evenly.  Line a tray with baking paper and spread the cauliflower evenly.

3  Bake for about 40 minutes, until tender, stirring occasionally.
