3/4 cup freekeh
1 cup flat-leaf parsley, finely chopped
3/4 cup mint, finely chopped
1 small red onion, finely diced
3 spring onions, finely sliced
12 vine-ripened cherry tomatoes, quartered
1/2 cup extra virgin olive oil
juice of 2 lemons
sea salt or pink salt and freshly ground pepper
Place the freekeh in cold water, bring to the boil and simmer the freekeh for about 10 – 15 minutes if cracked and 35 – 45 minutes if whole. Drain, rinse with cold water and allow to dry.
Place the freekah in a bowl and add the parsley, mint, red onion, spring onions and vine-ripened tomatoes. Mix well.
Whisk the olive oil and lemon juice together and season to taste with salt and pepper. Pour the dressing over the salad mix through thoroughly to coat.
Serve fresh on it’s own or delicious with chicken or fish.
